Domoda is a Gambian stew of meat and vegetables simmered in a thick peanut sauce. The sauce is the point: peanut butter loosened gradually with water or broth, then pushed along with tomato paste, paprika and cayenne, turns smooth and rich without any cream. Beef, lamb or chicken all work, and the carrots, potatoes and cabbage soak up the sauce. Ladle it over rice and adjust the cayenne to taste.

Instructions

Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until they turn translucent and smell fragrant.

Add the meat and cook, stirring now and then, until it is browned on all sides.

Stir in the tomato paste, cayenne and paprika. Cook for one more minute so the spices blend into the meat and onions.

Add the peanut butter and mix it through. Pour in the water or broth a little at a time, stirring constantly, until the base is smooth and even.

Turn the heat to low, cover the pot and simmer for about 30 minutes, until the meat is tender. Stir occasionally and add a splash more water or broth if the stew gets too thick.

Add the carrots, potatoes and cabbage. Keep simmering for 15 to 20 minutes, until the vegetables are as soft as you like them.

Taste, then season with salt and pepper. Serve hot with steamed rice or couscous.
