Doro fitfit is an Ethiopian chicken salad built on shredded injera, the sour flatbread that anchors the country's table. Here the injera soaks up a dressing of lemon juice, olive oil, garlic and cayenne, so each bite is tangy, soft and lightly spicy. Cooked chicken, tomato, onion and green chile add freshness and bite. It works well with leftover or rotisserie chicken and needs no cooking beyond that.

Instructions

Put the shredded injera, cooked chicken, chopped onion, diced tomatoes and chopped green chile peppers in a large mixing bowl.

In a small bowl, whisk the lemon juice, olive oil, minced garlic, paprika, cayenne and a pinch of salt until the dressing looks evenly blended.

Pour the dressing over the contents of the large bowl. Toss gently until the injera, chicken and vegetables are all coated.

Leave the salad to sit for 10 to 15 minutes so the injera softens and the flavors mingle.

Taste, then add more salt or cayenne if it needs it. Scatter chopped cilantro or parsley over the top and serve.
