Drawn Butter
Drawn butter is a simple warm butter sauce, traditionally served alongside lobster or crab. This version uses a small amount of flour worked into the butter and then stirred into boiling water, which gives the sauce a little body so it clings to shellfish instead of running off. It takes only three ingredients and a few minutes, and unsalted butter lets you control the seasoning yourself.
Instructions
Pour the water into a saucepan and bring it to a boil over the heat.
While the water heats, work the flour and butter together in a small bowl until the mixture is completely smooth, with no dry flour or lumps left.
Stir the flour and butter mixture into the boiling water. Add salt a little at a time, tasting as you go, until the sauce is seasoned the way you like it.
