Dud Patti (Milk Tea)
Dud patti is milk tea made by steeping the leaves directly in hot milk, with no water involved. The tea never gets brewed separately and topped up with milk, so the milk takes on the full flavor of the leaves as it heats. The method needs only one pan, a spatula and a strainer, and it is ready in about ten minutes. Loose tea from a South Asian grocery works best.
Instructions
Pour the milk into a pan and set it over medium-low heat. Let it heat gently until it simmers.
When the milk is nearly boiling, add the loose tea leaves.
Stir the milk a little with a spatula so the leaves steep and the tea brews before the milk rises and boils over.
Take the pan off the heat as soon as the milk boils over. Pour the tea into a cup through a strainer to catch the leaves.
Sweeten the tea with sugar to taste and serve it hot.
