Easy Pasta Sauce
This is a quick tomato and cream sauce built in one frying pan, ready in the time it takes to boil pasta. The garlic is ground to a paste and cooked until golden, so it melts into the oil and flavors every bite. Chop the tomatoes for a rustic, chunky sauce or purée them for a smooth one. It also works well with added vegetables.
Instructions
Finely chop the tomatoes, or purée them in a food processor. Chopping gives a chunkier sauce, while puréeing gives a smoother one, so pick whichever texture you want. Grind the garlic to a paste.
Heat the oil in a frying pan until hot but not too hot. A non-stick pan needs less oil. Turn the heat down and stir in the garlic paste.
When the garlic turns golden-brown, add the tomatoes. Cook them until they look and smell cooked rather than raw and have turned a deeper, redder colour.
Season with salt and pepper to taste. When the tomatoes are almost done, stir in fresh cream to taste and cook for about 30 seconds.
Add the oregano and cook for another minute. Toss in the cooked pasta and any vegetables you are using.
Serve hot, garnished with fresh herbs such as basil or rosemary.
