Eba (Cassava Flake Swallow)

Eba is a Nigerian swallow made from nothing more than garri, the dried cassava flakes, and boiling water. It is a dense, starchy dough that people tear off in small pieces, shape with their fingers and use to scoop up soup. Its mild taste suits rich, well-seasoned soups like egusi, efo riro and ogbono. The only real skill is stirring steadily so the dough turns out smooth.
Instructions
Bring the water to a boil in a pot.
Add the cassava flakes a little at a time, stirring as you go so the garri absorbs the water evenly.
Keep stirring and cooking until the mixture comes together as a smooth dough with no dry lumps.
Serve the eba hot alongside a soup of your choice, such as egusi, efo riro or ogbono.
