Egg Soda (Soda Sữa Hột Gà)
Egg soda is a Vietnamese and Cambodian drink that turns a single egg yolk and a little condensed milk into a frothy, lightly sweet fizz. It takes only a couple of minutes and no special equipment, just two glasses and a spoon. The yolk gives the soda a creamy body, while the condensed milk adds sweetness without needing sugar. It is a good way to see how simple street drinks can be.
Instructions
Fill a tall glass with ice and set it aside.
In a second glass, put the sweetened condensed milk and the egg yolk.
Pour in carbonated water until the glass is as full as you like it. Stir until the yolk and condensed milk are fully blended into the water and the drink looks evenly pale and slightly foamy.
Pour the mixture over the ice in the first glass and drink it right away.
