Egg Wash

Egg wash is the quick glaze that gives pies and other baked goods a glossy, finished top. The choice of egg part changes the result, so you can pick the yolk, the white, or the whole egg to suit what you are making. Thinned with a little water or milk, it brushes on evenly. It also works as a coating for fish and other foods before deep frying.

Instructions

Put the egg yolk, egg white, or whole egg in a small bowl and add the water or milk.

Beat the mixture with a fork or whisk until it is smooth and no streaks of egg remain.

Brush or apply the wash as your recipe directs, whether over the top of a pie or as a coating before frying.
