Eve's Apple is a single baked apple stuffed with raisins, brown sugar and cinnamon, cooked in the microwave in a few minutes. It suits anyone who wants a warm dessert for one without heating an oven. The brown sugar melts into the raisins as the apple softens, and a spoonful of cool sour cream on top gives a tangy contrast to the sweet, spiced filling.

Instructions

Core the apple most of the way down, stopping before you reach the bottom so the filling stays inside.

Stir the raisins, brown sugar and cinnamon together in a small bowl. Spoon the mixture into the cavity of the apple.

Cover the apple loosely with plastic wrap and pierce the wrap so steam can escape.

Microwave on HIGH (100% power) for 2 to 3 minutes. Push a skewer into the apple to check it, and it is done when the skewer slides in easily.

Leave the apple to stand for several minutes, since it keeps cooking a little after it comes out. It is ready to eat once it has cooled enough to handle.

Serve with the sour cream on the side or spooned over the top, if you like.
