Faten Tsaki (Corn Porridge)

Faten tsaki is a corn porridge popular among people in northern Nigeria, and it is cooked with the seasonings of a stew rather than served plain. Tomato and chile paste, onion, Nigerian curry powder and ground crayfish are cooked down first, then the corn grits simmer in that base. Chopped spinach goes in at the end, so the greens stay fresh. It is a one-pot meal that needs only a spoon.

Instructions

Blend the tomatoes and chile pepper together until you have a smooth paste.

Heat the oil in a pot for 2 minutes, then add the diced onion.

Stir in the seasoning cubes, salt, curry powder and ground crayfish. Pour in some water and cook for 5 minutes.

Stir in the corn grits and top up with water. Simmer the porridge, stirring now and then so the grits do not stick to the bottom of the pot.

Add the chopped spinach and cook for a few more minutes, until it has wilted into the porridge.

Serve the porridge hot.
