Fattoush
Fattoush is a Lebanese salad of chopped vegetables, herbs and toasted pita, suited to hot weather. Its dressing is the interesting part: lemon juice and garlic are given body with a little cornstarch cooked in water, then seasoned with sumac, the ground red berry that adds a dry, tart edge common in Middle Eastern cooking. Purslane, a lemony succulent, adds a further sour note among the mint and parsley.
Instructions
Stir the water and cornstarch together in a small saucepan over medium-high heat. Keep stirring until the liquid thickens.
Take the pan off the heat and stir in the lemon juice, garlic, sumac, salt and pepper. Taste and adjust the seasoning.
Chill the dressing in the refrigerator until you are ready to serve.
Put the lettuce, cucumber, tomatoes, green onions, parsley, mint, bell pepper, purslane and arugula in a large bowl and toss them together.
Pour the cold dressing over the salad and toss again. Serve with the toasted pita pieces. If you cannot find purslane, watercress, parsley or arugula can stand in for it.
