Fines herbes is the classic French blend of parsley, chives, tarragon and chervil, mixed in equal parts. Each herb is mild on its own, and together they give a soft, grassy flavor with a hint of anise from the tarragon and chervil. Chop them finely and stir them into omelettes, butter sauces or soft cheese, where their delicate taste is not overwhelmed by stronger seasonings.

Instructions

Make sure the tarragon, chervil, chives and parsley are all chopped to a similar fine size, so no single herb dominates any one spoonful.

Put the four herbs together in a small bowl and toss them with a fork or your fingertips until they are evenly mixed and look like a single green blend.

Use the mixture as your recipe directs. Fines herbes is usually made fresh, so mix it close to the time you need it.
