Firecracker Rub
Firecracker Rub is a big-batch barbecue spice mix built around smoked paprika and a generous measure of cayenne. The contributor wrote it as a reply to commercial rubs that taste mostly of salt, and the balance here shows why: a full cup of paprika carries the smoke, dark brown sugar rounds off the heat, and coriander and rosemary add a resinous, citrusy backbone. Make one jar and it will season many racks of ribs or pork shoulders.
Instructions
Measure all the ingredients into a large bowl, using a dry measuring cup for the paprika, sugar, salt, spices and rosemary, and a tablespoon for the garlic.
Stir everything together with a whisk or fork, pressing out any lumps of brown sugar against the side of the bowl. The rub is ready when the color is an even deep red-brown with no pale streaks of sugar or salt.
Transfer the mix to an airtight container and seal it tightly. Shake the container once or twice to settle the blend before use.
