Fireweed Vinegar
Fireweed vinegar is a flavored vinegar made by steeping the pink blossoms of a wild northern plant in rice or white wine vinegar. Only two ingredients are needed, and the long, dark steep does all the work, slowly drawing the color and floral character of the flowers into the liquid. Use it where you would use any light vinegar, in dressings or for sprinkling over greens. Foragers gain a new use for a summer harvest.
Instructions
Rinse the fireweed blossoms and buds in a colander, then leave them to dry completely.
Put the dried blossoms into a sterilized jar and pour the vinegar over them until they are covered.
Set the jar in a dark place and let it steep for 3 to 4 weeks.
Strain the vinegar through a fine strainer or a paper coffee filter to remove all the plant material.
Store the strained vinegar in the refrigerator. For longer storage, process it in a boiling water bath for 5 minutes.
