Fit-fit (Ethiopian Bread Salad)

Fit-fit is a warm Ethiopian bread salad that turns stale injera into a proper breakfast. The torn flatbread is fried in spiced butter with onion, tomato and berbere, so the pieces soak up the sauce while the edges crisp in the pan. Niter kibbeh gives the dish its fragrant base, and the sourness of the injera keeps it lively. It is a sensible way to use leftovers.
Instructions
Melt the niter kibbeh or butter in a large skillet over medium heat.
Add the chopped onion and cook until it turns translucent and picks up a little brown color.
Stir in the diced tomatoes and the jalapeño, if you are using it. Cook for a few minutes, until the tomatoes begin to soften.
Sprinkle the berbere over the pan and stir well so the onions and tomatoes are evenly coated. Use more or less depending on how hot you like it.
Add the torn injera and toss gently to coat it with the tomato and onion mixture.
Keep cooking for a few minutes, stirring now and then, until the injera is hot all the way through and slightly crisp at the edges.
Season with salt, going carefully because injera is naturally a little sour.
Transfer to a serving dish, scatter the cilantro or parsley on top, and serve warm.
