Lower-Sugar Flapjacks

These flapjacks use only 1 oz (28 g) of sugar, so most of the sweetness comes from two tablespoons of golden syrup and the toasted oats themselves. Beating the butter with the sugar first gives a creamy base that holds the oats together as it bakes. Half a teaspoon of salt sharpens the flavor. Cutting the slices while the tray is still warm, then letting them cool in the tin, keeps the edges neat.

Instructions

Heat the oven to 375 °F (180 °C). Grease a 10 x 8-inch (about 25 x 20 cm) baking tin.

Beat the butter and sugar together until the mixture looks creamy. Stir in the warmed golden syrup.

Work the rolled oats and salt into the mixture until all the oats are coated.

Press the mixture firmly into the greased tin. Bake in the heated oven for 30 minutes, or until the top is brown.

When the flapjacks have firmed up, cut them into slices. Leave the slices in the tin until completely cool.
