Fried corn is a quick side that turns a humble can or bag of kernels into a crisp, salty snack. The contributor first ate it in China and found it a pleasant surprise. Because the corn only needs under two minutes in the oil, it is also a forgiving first project for anyone new to deep-frying. Serve it where you would otherwise put chips or fries, and try carrots or green beans too.

Instructions

If you are using frozen corn, let it thaw completely. If you are using canned corn, drain it if needed and warm it in a glass bowl in the microwave or gently in a pan on the stove.

Toss the warm corn in a light coating of egg wash. You can skip this step, but the egg helps the flour stick.

Stir the salt, pepper, MSG if you are using it, and any other spices into the flour. Taste the seasoning on a pinch of the mix if you like, since it is the only seasoning the corn will get.

Lift the corn out of the egg wash and toss it in the seasoned flour until every kernel is well coated.

Heat enough oil for deep-frying over moderate to high heat. Fry the floured corn for less than 2 minutes, until the outside is golden brown.

Serve the fried corn alongside another dish, in the way you might serve chips or fries. For more variety, fry moderately chopped carrots or green beans the same way and mix them in.
