Fried Plantain and Egg

Fried plantain and egg is a Nigerian breakfast made from just four ingredients and one pan. The plantain browns first, then the egg is scrambled in the same oil, so it picks up some of the plantain's flavor. Salt on both the fruit and the egg keeps the plate savory. It takes about 30 minutes, and the sweet, caramelized slices against soft egg make a simple, filling start to the day.
Instructions
Peel the plantain and cut it into slices. Sprinkle the slices with salt and toss them so the seasoning coats them evenly.
Pour a little oil into a frying pan and heat it. When the oil is hot, add the plantain and cook it, turning from time to time, until the slices are browned on the outside.
Lift the plantain out of the pan and set it aside.
Whisk the egg with a pinch of salt. Pour it into the same pan and cook it the way you would scrambled eggs, stirring gently until it is set.
Serve the scrambled egg and the fried plantain together on the same plate.
