Fruit Cake
This fruit cake gets its flavor from orange, which goes into the batter as grated fruit and returns on top as a garnish. The base is an egg yolk sponge beaten until light, so the crumb stays soft under a coat of whipped cream. Strawberries and kiwifruit add red and green against the orange. It bakes in only 20 minutes, which makes it a quick choice for a birthday or a table that needs a fresh looking centerpiece.
Instructions
Put the egg yolks, butter, sugar and cake emulsifier in an electric mixer. Whip them until the mixture turns pale, light and visibly larger in volume.
In a separate bowl, stir together the flour, baking soda and grated orange. Fold this into the whipped yolk mixture until no dry flour remains.
Grease a baking pan with butter. Scrape the batter into the pan.
Bake the cake for 20 minutes at 360°F (185°C). It is done when a skewer pushed into the center comes out clean.
Let the cake cool, then move it to a serving plate. Spread the whipped cream over the top and all the sides.
Decorate the cake with orange, halved strawberries and kiwifruit, then serve.
