Fruit Salad with Orange Juice

This fruit salad of apples, bananas, oranges and maraschino cherries is dressed with nothing more than orange juice. The juice does useful work, keeping the diced fruit moist and adding a sharp citrus note against the soft banana. A splash of syrup from the cherry jar adds sweetness and a pink tint. The contributor says the recipe has passed down more than five generations, and it works as a snack or a light dessert.

Instructions

Peel the apples and bananas, then dice them into small pieces and put them in a large bowl.

Peel the oranges and pull them apart into sections. Cut the sections into smaller pieces if you like, and add them to the bowl.

Cut the cherries into halves or quarters, depending on their size. Add them to the bowl along with a little of the juice from the cherry jar.

Stir everything together gently, then pour in orange juice to your taste. The fruit should be lightly coated and moist, not swimming.

Serve right away, or chill the salad in the refrigerator first if you prefer it cold.
