Fruit Salad with Orange Soda (Ensalada de Fruta)

Ensalada de fruta is the Uruguayan Christmas dessert, served cold in the middle of summer. Canned peaches and pineapple lend their juice to the bowl, fresh cherries, plums and passion fruit add variety, and a pour of chilled orange soda over the top gives it a light fizz and sweetness. It stretches a few pieces of fruit across a crowd, and every fruit is optional, so it adapts to what you have.
Instructions
Tip the canned peaches and pineapple into a large bowl together with their juice. Cut the peaches into small pieces as you go.
Wash all the remaining fruit thoroughly. Remove the stalks and any leaves from the cherries and grapes, then add them to the bowl.
Cut the apple, orange, nectarine, plums, banana, passion fruits and strawberries into small pieces and add them to the bowl. Cover the bowl and chill it in the refrigerator.
Just before serving, stir the fruit lightly to mix it. Pour the chilled Fanta over the top, using less than the full amount if you prefer the fruit less drowned.
Serve with a slotted spoon so the soda drains away and each portion is mostly fruit. Any of the fruits can be left out if you do not have them.
