Fura Da Nono (Milk and Kefir Porridge)
Fura da nono is a Fulani porridge that pairs cooked millet with soured milk, and it is eaten cold. The millet is spiced with ginger and alligator pepper, which gives the dish a warm, peppery edge against the tang of the nunu. Plain kefir works well when you cannot find the traditional milk. Sweeten it to taste and add ice, and you have a thick, cooling bowl that is quick to put together.
Instructions
Wash the millet well, then soak it in hot water for 10 minutes so it softens. Drain off the hot water carefully.
Put the soaked millet in a blender with the alligator pepper, the ginger and a little water. Blend until the mixture is smooth and has no lumps.
Pour the blended millet into a pot and cook over medium heat. It is ready when it has thickened to a loose dough.
Scrape the cooked millet into a bowl and mix in the nunu, or plain kefir if you are using it instead. Stir in sugar a little at a time, tasting as you go, until it is as sweet as you like.
Serve the porridge chilled, with ice cubes added to the bowl.
