Gambian Baobab Juice (Bouye)

Bouye is a chilled Gambian drink made from the pulp of the baobab fruit, and it tastes tangy, lightly sweet and creamy all at once. The sour, almost citrusy pulp is softened with evaporated milk, so the result sits somewhere between a fruit juice and a thin milkshake. It is meant to be served very cold over ice with mint, which makes it well suited to hot days. Sweeten it to your own taste.

Instructions

Put the baobab pulp and water in a blender and run it on high until the mixture looks smooth and evenly combined.

Set a strainer or a piece of cheesecloth over a pitcher and pour the blended mixture through it. This catches any stray seeds or fibrous bits and leaves a smoother juice.

Stir the evaporated or condensed milk into the strained juice, then add the sugar and the vitamin C powder if you are using it. Keep stirring until the sugar has dissolved and the color is even.

Chill the pitcher in the refrigerator for at least 1 hour so the flavors settle together.

Stir the juice well before serving, since it can separate a little while it sits.

Fill glasses with ice cubes and pour the juice over them. Top each glass with fresh mint leaves and serve right away.
