Garlic asparagus is a quick side dish built on a base of softened onion and a generous amount of golden garlic. Cooking the aromatics first in butter and olive oil gives the pan a sweet, savory foundation before the asparagus goes in. The spears then brown at the edges instead of steaming, which keeps some bite and adds a toasted note. It needs one pan and goes with almost any main.

Instructions

Melt the butter with the olive oil in a large, straight-sided sauté pan over medium high heat. Add the diced onion and cook, stirring, until it turns translucent.

Stir in the garlic and cook, stirring, until it turns golden.

Add a pinch of salt and a few grinds of black pepper, then cook for 1 more minute.

Add the asparagus and season generously with kosher salt and more freshly ground black pepper. Sauté until the spears are lightly browned around the edges.

Taste and adjust the seasoning if you like. Serve warm.
