Garlic Lemon Marinade
This garlic lemon marinade is a sharp, pungent mix that suits fish and chicken equally well. Eight cloves of garlic and the zest of a whole lemon give it far more punch than juice alone, while the oil carries both through the meat. Blending turns everything into a smooth emulsion in seconds. Instructions
Squeeze the lemon juice and measure out one third of a cup. Smash and mince the garlic cloves, and finely zest the whole lemon.
Put the lemon juice, garlic, salt, black pepper, lemon zest and vegetable oil into a blender.
Blend until the mixture is smooth and no coarse pieces of garlic or zest remain.
Pour the marinade into a jar or container with a tight lid and keep it in the refrigerator for up to one and a half weeks. Shake well before each use, since the oil and juice will separate as it sits.
