This garlic parsley dressing is a sharp, quick vinaigrette built for boiled broccoli or cauliflower. It uses four times as much vinegar as oil, so it tastes bright and tangy instead of heavy, which suits mild, soft vegetables. Instructions

Measure the vinegar and olive oil into a small bowl or a jar with a lid.

Add the garlic powder, black pepper and parsley.

Stir well, or shake the closed jar, until the garlic powder has dispersed and no clumps remain.

Pour the dressing over a salad of boiled broccoli or cauliflower and toss so the pieces are evenly coated.
