Geisha soup is a Nigerian dish built around a stuffed, rolled chicken breast cooked in a pot of potatoes. The chicken is pounded thin, filled with fried onion, garlic and carrot plus some boiled potato, then pinned shut with toothpicks. Cooking the roll in the potato pot means the filling stays tucked inside while the broth takes on flavor. It is an unusual way to present chicken soup.

Instructions

Heat a small amount of groundnut oil in a pot. Add the chopped onions, garlic and carrots, and fry until the vegetables are soft. Take the pot off the heat.

Bring a pot of salted water to the boil and cook the cubed potatoes in it. Keep the potatoes and their water in the pot, as you will need both later.

Lay the pounded chicken breast flat. Spoon the fried vegetables onto it, along with some of the boiled potatoes.

Roll the chicken up around the filling so the vegetables are enclosed. Pierce the edges with toothpicks to hold the roll closed.

Put the rolled chicken into the pot with the remaining boiled potatoes and cook for a few minutes. Season with salt to taste, then serve.
