Genger soup is a Nigerian soup built on the ground calyx of the genger tree, and it belongs to the Tiv people. Among the Tiv it is served at traditional ceremonies and used to help settle conflicts, so a pot of it carries real social weight. The base is thickened with genger powder and potash, then deepened with a paste of pepper, locust beans and kyoho, with fish and beef added at the end.

Instructions

Put the genger powder, potash (or baking soda) and water in a bowl and mix them together.

Transfer the mixture to a pot and cook it for a few minutes.

Blend the fresh pepper, gbaaye, kyoho and locust beans into a paste.

Stir the paste into the genger mixture in the pot and boil for a few minutes.

Add the fish, beef, seasoning cube and salt to taste. Let the soup cook for a few more minutes, stirring slowly, then serve.
