Ghee III
This ghee stretches butter with milk-flavored margarine, a budget-minded shortcut that still gives you a jar of cooking fat for the pantry. The semolina stirred in after straining is an unusual touch, and the optional step of sealing the fat in a jar with smoking grapevine or hickory wood adds a campfire note. Roasted, powdered fenugreek gives it a bittersweet, curry-shop aroma.
Instructions
Put the margarine and butter together in a saucepan over medium heat. Let them melt completely, then bring the mixture to a boil.
Pour the hot mixture through a fine strainer to remove any solids. Stir the semolina into the strained fat.
If you want a smoky flavor, set a smoking piece of grapevine wood or hickory wood in an empty jar and seal it. Add the strained butter and margarine mixture to the jar along with the roasted, powdered fenugreek if you are using it.
