Ghraiba bil Loz (Libyan Almond Ghraiba)

Ghraiba bil loz is a Libyan shortbread-style cookie made with butter, flour and ground almonds, topped with a whole almond. The ground nuts go straight into the dough, which gives a tender, crumbly texture that dissolves on the tongue and a clear almond flavor. It uses only six ingredients and no eggs, so the dough comes together in one bowl. Serve it with tea or coffee, or at festive gatherings.
Instructions
Heat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
Beat the softened butter and powdered sugar together in a bowl until the mixture is pale and fluffy.
Add the flour, ground almonds and vanilla extract. Mix until everything is combined and a soft dough forms.
Pinch off small pieces of dough and roll each into a ball about the size of a walnut. Set them on the prepared sheet with some space between them.
Press one whole almond into the center of each ball, flattening the cookie slightly as you do.
Bake for 12 to 15 minutes, until the edges turn golden brown. The cookies will still feel soft when they come out.
Leave the cookies on the baking sheet for a few minutes to firm up, then move them gently to a wire rack, since they are crumbly. Let them cool completely before serving.
