Ginger-Glazed Grilled Peaches
Grilled peaches with a ginger and brown sugar glaze make a dessert that needs almost no fuss. The glaze starts as peach nectar boiled down by half, so it tastes concentrated and intensely of peach rather than just sweet. Minced crystallized ginger adds a warm, chewy bite, and a pinch of salt keeps the sugar in check. Butter on the fruit helps it mark well on the grill.
Instructions
Pour the peach nectar into a saucepan and add the brown sugar, minced crystallized ginger, vanilla extract and salt. Bring the mixture to a boil over medium-high heat.
Keep it boiling until the liquid has reduced by half and looks syrupy. Set the glaze aside.
Brush the peeled, halved peaches all over with melted butter. Place them on a medium grill.
Cook the peaches until they are well marked by the grates. Brush them often with the nectar glaze as they cook.
Pour the remaining glaze into a large bowl and add the grilled peaches. Toss them gently to coat and serve.
