Ginger Tea

Ginger tea is a simple hot drink made by simmering fresh ginger in water. It needs no tea leaves, only a knob of the root, a pot and a strainer. Many people brew it when they have a cough or a sore throat, or just to warm up on a cold day. Because you add the sweetener at the end, each cup can be as sharp or as mild as you want.
Instructions
Rinse the fresh ginger well to remove any dirt, then cut it into small pieces.
Put the ginger in a pot, add water, and bring it to a boil.
Lower the heat and let the ginger simmer for a few minutes, until the water has taken on the color and smell of ginger.
Strain the tea to remove the ginger pieces. Stir in sweetener to taste if you like, and serve.
