Glazed onion canapes turn one diced onion into eight or so bite-sized appetizers with very little work. The onion cooks slowly in butter until caramelized, then gets a coating of brown sugar and honey that makes it sticky and sweet. A spoonful of cool sour cream on a crisp cracker cuts the richness. The quantities are loose, so adjust the sweetness to your taste.

Instructions

Melt half of the butter in a small saucepan. Turn the burner to medium heat.

Add the finely diced onion to the pan. Cook it slowly, stirring often, so it softens and turns deep golden brown.

Add more of the remaining butter whenever the pan looks dry, since onions burn easily and need watching. Keep the heat steady and do not rush this stage.

Once the onions are caramelized, stir in the brown sugar and the honey. Mix thoroughly until every piece of onion is coated in a shiny glaze.

Spoon the glazed onions onto the crackers, arranging them neatly. Finish each one with a small dollop of sour cream and serve.
