Gochujang (Imitation)
This quick chile paste stands in for gochujang when the jar in your cupboard turns out to be empty. It is not a traditional fermented paste, so it lacks that slow, funky depth, but it gets close on heat, salt and a little sweetness. Soy sauce, vinegar, sugar and sesame salt come together in one bowl in minutes, with chopped green onion adding a fresh edge.
Instructions
Measure the soy sauce, vinegar, sugar, salt and red chile powder into a small bowl. Start with the smaller amount of salt and add more later if you want it saltier.
Add the chopped green onion and the sesame salt to the bowl.
Stir everything together thoroughly until the chile powder is fully moistened and no dry patches remain. Taste the paste and adjust the salt if needed.
Put any leftover paste in a covered container and keep it in the refrigerator.
