Granola Bars
Chewy granola bars with chocolate chips are easy to make at home with a single bowl and a baking pan. The binder of butter, brown sugar and corn syrup is what keeps the bars soft and chewy instead of dry and crumbly, and the egg helps hold the slab together when you cut it. Because you control the mix, you can add nuts or raisins to suit your own taste.
Instructions
Heat the oven to 350°F (180°C). Grease a 13 x 9-inch (30 x 23 cm) baking pan.
Combine the soft butter or margarine, brown sugar and corn syrup in a large bowl until they form a smooth, even mixture.
Mix in the egg and vanilla until fully incorporated.
Stir in the oats and chocolate chips until the oats are evenly coated and the chips are spread throughout the mixture.
Spread the mixture into the prepared pan and press it into an even layer.
Bake for 20 to 22 minutes.
Let the pan cool before cutting the slab into bars. If you like, stir some nuts and raisins into the mixture before baking for extra flavor.
