Greek Yogurt Sauce

This Greek yogurt sauce is a quick herb and garlic blend that works as a dip, a baste or a gyro topping. The lemon juice and olive oil loosen the yogurt and give it a sharp, rich backbone, while dried oregano, fresh rosemary and parsley add layers of herbal flavor. Everything goes through the food processor in one go, so it takes little effort. Spoon it over grilled lamb or pork, or serve it with chips.

Instructions

Measure the yogurt, lemon juice and olive oil into the bowl of a food processor. Add the dried oregano, minced garlic, diced red onion, chopped rosemary and chopped parsley.

Season with salt and freshly ground black pepper, going lightly at first since you can adjust later.

Pulse the mixture until it is relatively smooth. A few flecks of herb and onion are fine, so stop before it turns completely uniform.

Taste the sauce and add more salt or pepper if it needs it.

Pour it into a serving bowl and bring it to the table with a Greek-style dish. It can also be used as a baste for grilled lamb or pork.
