Green Beans with Tomato and Onion (Boranija)

Boranija is the Serbian word for green beans, and this version keeps the dish simple: beans warmed through in a soft base of onion and tomato. The minced garlic goes in only at the end, so it tastes bright rather than cooked down. A spoonful of cold, thick yoghurt on top cools the whole plate. Canned beans and tomatoes work when you are short on time, and bread is the natural partner.

Instructions

Trim the green beans and boil them in salted water until tender. Drain them well and set them aside.

Heat the oil in a pan over medium-high heat. Add the chopped onions and cook them until they turn translucent.

Stir in the peeled, chopped tomatoes and heat them through. Season with salt to taste.

Add the drained beans to the pan and heat them through so they take on the flavor of the tomato and onion.

Stir in the minced garlic just before serving, so it stays sharp and fresh.

Serve the beans with plain yoghurt on the side, ideally a thick one such as Greek yoghurt. Bread goes well with it.
