Green Leaf Juice
Green Leaf Juice is a bright, sharp drink that makes a bunch of chard and cilantro easy to get down. The trick is the citrus: half a pineapple and a good measure of fresh lime juice cover the bitterness of the leaves, while a knob of ginger adds a warm edge at the finish. You need a juice extractor and about ten minutes, and the recipe makes two glasses.
Instructions
Squeeze the lime juice into the container that will catch the juice from your extractor, so it is already waiting there when the rest comes through.
Cut the top and bottom off the pineapple, then trim away the spiny outer skin and the tough, pithy core. Slice the flesh into long thin strips that fit easily into the feed tube, and run them through the extractor.
Tear the chard or collard leaves into smaller pieces so they feed in without jamming, then juice them. Follow with the cilantro, and finish with the ginger root.
Stir the juice well so the lime and the green juices are evenly mixed. Pour over ice and serve right away. Exact measuring is not important, so adjust to taste.
