This grill seasoning is a big-batch rub that balances sweet, smoky and hot in one jar. Dark brown sugar and finely minced dried apple give it a fruity sweetness that caramelizes on the grill, while three kinds of paprika, cayenne, lemon pepper and red pepper flakes bring layered heat. Dried rosemary and garlic powder round it out. Mix it once and you have a shaker ready for the whole season.

Instructions

Mince the dried apples in a food processor until they are very fine, so they blend evenly with the powders and do not form chunks.

Measure all the ingredients into a large bowl, including the minced apples, the sugars, the salt, the peppers, the paprikas, the rosemary and the garlic powder.

Stir and toss everything together until the color is uniform and no streaks of sugar or spice remain.

Spoon the mix into an airtight container that has a shaker lid.

Use it as you like on meat or vegetables, or in any recipe that calls for grill seasoning.
