Grilled Bananas with Coffee Syrup
Grilled bananas with coffee syrup turn a basic fruit into a warm dessert with a caramel edge. Cooking the bananas in their skins keeps the flesh soft and steamy while the cut side picks up char. The syrup is coffee, cream, butter and cinnamon reduced to a glossy half cup, and a spoonful of coffee liqueur and a pinch of salt keep it from tasting merely sweet.
Instructions
Put the coffee, sugar, cinnamon, cream, coffee liqueur, salt and butter in a large saucepan. Do not add the bananas.
Bring the mixture to a boil over medium high heat and let it bubble until it has reduced to about ½ cup. Take the pan off the heat and set the syrup aside.
Brush the cut sides of the unpeeled banana halves generously with the syrup.
Grill the bananas over medium high heat until they are marked with grill lines and slightly charred. Pull them off the heat as soon as they reach that point.
Peel the bananas, then spoon more syrup over them. Serve with the rest of the syrup on the side for pouring.
