Grilled fruit pouches turn peaches and plums into a hot, syrupy dessert cooked right on the coals. The fruit steams in brandy, sugar and butter inside its foil wrapper, while a bed of crushed crystallized ginger underneath gives each portion a sharp, sweet bite. Lemon zest keeps the syrup from turning cloying. Everything is assembled ahead in one bowl, and the pouches need only seven minutes over the coals.

Instructions

In a large bowl, toss the peaches and plums with the sugar, salt, lemon zest and brandy until the fruit is evenly coated. Set the bowl aside while you prepare the foil.

Lay out four large sheets of aluminum foil. Scatter a layer of crushed crystallized ginger over the center of each sheet to form a base for the fruit.

Divide the fruit mixture among the four sheets, piling it on top of the ginger. Top each portion with 1 tablespoon of the butter, then fold the foil over and seal the edges to make a pouch.

Set the pouches on the hot coal area of a kettle grill and cook for 7 minutes. Serve warm.
