Grilled Sliders

Grilled sliders are small burgers about 2 inches across, and this version gets them with a clever shortcut. Instead of shaping sixteen patties by hand, you roll the meat flat on a sheet pan and cut it into squares with a pizza wheel, so every patty is the same size and cooks at the same pace. A blend of chuck and sirloin gives richness and beefy flavor, and rosemary and garlic powder season the surface.

Instructions

Heat the oven to 250°F and heat a grill or grill pan to 350°F.

Put the split buns in the warm oven to toast, then set them aside. Stir the salt, pepper, garlic powder and rosemary together in a small bowl and set that aside too.

Mix the ground chuck and ground sirloin together and spread the meat on a parchment-lined sheet pan. Lay a sheet of plastic wrap over the top and roll the meat out until it fills the pan in an even layer.

Peel off the plastic wrap. Use a pizza cutter or wheel to cut the meat into 16 equal squares.

Brush the patties with olive oil and season both sides with the herb and spice mixture.

Grill the patties for 2 to 3 minutes on each side.

Spread mayonnaise on the toasted buns, set a patty on each bottom half, and close with the top half. Serve while still warm.
