Guacamole (Chile- and Herb-Free)
This guacamole is a plain, traditional Mexican version built from only five ingredients, with no chile and no herbs. Ripe avocado does the work, mashed smooth and lifted by lime, with chopped tomato and onion adding freshness and a little crunch. It is quick to put together and mild enough to use as a spread or an addition to other dishes, as well as a dip for chips.
Instructions
Slice the avocados in half, working gently around the pit, then remove the pit and scoop the flesh into a bowl.
Mash the avocado with a fork until it is smooth and no large lumps remain.
Stir in the chopped tomatoes and onion so they are spread evenly through the mash.
Squeeze the lime juice over the mixture. The acidity keeps the avocado bright and balances its richness.
Add salt a little at a time, stirring and tasting until the seasoning suits you.
Serve right away with chips or bread, or spoon it over a salad as a dressing.
