This chile-free guacamole relies on lime, raw garlic and red onion for its sharpness, so it suits anyone who wants avocado flavor without heat. The lime is generous, a juice of one and a half, and the recipe expects you to taste and adjust before chilling. Diced tomato and cilantro add freshness, and pressing wrap onto the surface keeps the top green. Add peppers if you like.

Instructions

Put the garlic, lime juice, red onion, tomato, cilantro and salt into a medium mixing bowl. Leave the avocados out for now.

Halve the avocados and scoop the flesh into the bowl. Mash it with a large fork until the avocado is broken down and mixed through the other ingredients. A blender also works if you want a smoother result.

Taste and adjust the seasoning or anything else that seems to need it. Go lightly on the lime, since its sharpness softens as the guacamole sits.

Cover and refrigerate for at least an hour so the flavors can blend. Pressing plastic wrap directly onto the surface of the guacamole helps keep air off it and slows browning.

If the top has turned brown when you take it out, scrape that layer off. It is harmless. Putting the avocado pit in the bowl does not prevent browning.
