Gunkanmaki (Topped Oval Sushi)

Gunkanmaki is the sushi that solves the problem of toppings too loose to sit on a rice block. The name means battleship roll, and it fits: a strip of nori wraps an oval of rice to form a small wall. Inside it holds soft, spoonable things like sea urchin roe, salmon roe or minced raw tuna, so every piece stays tidy and can be eaten in one bite.
Instructions
Cut the nori into strips 1 inch wide. Each strip should be long enough to go all the way around a piece of rice with at least 1 inch of overlap.
Shape the sushi rice into ovals about 1 inch wide, 1¼ inches long and 1 inch high.
Hold one end of a nori strip against the rice and wrap the strip fully around it. Wet the inside of the overlapping end, then press it over the first end so the seam seals.
Stand the wrapped rice upright so the nori forms a low wall around an open top. Spoon your chosen topping or toppings onto the rice: sea urchin roe, salmon roe, minced tuna, sliced cucumber or a quail egg.
