Habas con jamon is a quick Spanish dish of broad beans cooked with onion and cured pork. The ham or bacon renders its fat into the olive oil, and the beans and onion pick up that savory base in only a few minutes. Fresh or canned beans both work, so it is easy to make any time of year. Vegetarian bacon can stand in for the pork, and the dish still holds together.

Instructions

Pour a little olive oil into a pan and set it over medium heat. Add the sliced onion and the ham or bacon, and fry them together until the onion has softened and the meat has taken on some color.

Tip in the broad beans and stir them through the onion and ham. Sauté for a few minutes, until the beans are soft when you bite one.

Serve the beans straight from the pan while they are hot.
