Ham and Cheese Crepes

Ham and cheese crepes make a quick baked supper from ready-made crêpes and a handful of pantry items. The filling is cheddar loosened with sour cream and sharpened with a little mustard and green onion, so it stays creamy in the oven instead of turning greasy. A buttered bread crumb topping adds a light crunch over the soft rolls. The whole dish takes about twenty minutes to bake and serves six.

Instructions

Heat the oven to 350°F.

In a small bowl, stir together the cheddar, green onion, salt, pepper, sour cream and mustard until it forms an even, spreadable filling.

Lay the crêpes out flat and place one slice of ham on each one.

Spread about 1 tablespoon of the cheese mixture over each slice of ham.

Roll up each crêpe and set the rolls side by side in a 13x9-inch baking pan.

Mix the melted butter with the bread crumbs and sprinkle the mixture over the rolled crêpes.

Cover the pan loosely with foil so the crumbs are not pressed down.

Bake at 350°F for 15 to 20 minutes, until the crêpes are heated through and the filling is soft.
