Ham Sauce (Salsa di Prosciutto)

Ham sauce is a quick Italian sauce built from a handful of pantry items, and it is not the same thing as a glaze for baked ham. Strips of ham or prosciutto are softened in butter, given a teaspoon of tomato purée for depth, then simmered briefly in stock. It takes about as long as boiling the pasta, so it suits a fast weeknight dinner over rice or spaghetti.
Instructions
Melt the butter in a small saucepan over gentle heat. Keep the heat low so the butter does not brown.
Add the strips of ham or prosciutto and cook them gently in the butter, stirring now and then, until they are warmed through and lightly coated.
Stir in the tomato purée and mix until it is evenly spread through the butter and ham.
Pour in the stock and bring it to a simmer. Cook for about 5 minutes, until the sauce has come together and the flavors have blended.
Spoon the sauce over cooked rice, or toss it with freshly drained pasta until every piece is coated.
