Hanjin Ligidi (Nigerian Lollipops)
Hanjin ligidi is a cone-shaped Nigerian sweet that works much like a lollipop. It is also known as ekana gowon and is mostly made for children. The base is tsamiya, or tamarind, soaked in hot water and cooked down with sugar into a thick syrup, so the candy keeps a sour edge. Foil or paper cones serve as the molds, which makes it a simple project.
Instructions
Shape food-safe paper or aluminum foil into small cones and stand them upright so they are ready to hold the hot syrup.
Brush any dirt or dust off the tsamiya. Wash it in a clean bowl of water, then drain it thoroughly.
Soak the tsamiya in hot water for about 5 minutes, until the liquid has taken on its color and flavor.
Pour the soaking liquid into a pot and set it over medium heat. Stir in the sugar a little at a time, letting each addition dissolve before adding more, until the syrup turns very thick.
Stir in your chosen flavoring and any coloring you like.
Divide the syrup between the prepared cones. Let it cool slightly, then push a toothpick or other stick into each one.
Leave the cones until the candy has set and hardened completely. Peel away the paper or foil and serve.
