Haupia is a Hawaiian coconut pudding that sets firm enough to slice into neat squares. It needs only four ingredients: coconut milk, sugar, salt and cornstarch. The cornstarch stands in for the Polynesian arrowroot starch that was used originally. Stirring the starch in slowly keeps the pudding smooth, and an hour of cooling does the rest. The result is a clean, mild coconut flavor with a soft, sliceable texture.

Instructions

Pour the coconut milk into a saucepan and add the sugar and salt. Set it over medium heat and stir until the sugar has dissolved.

Add the cornstarch slowly while stirring, so it does not form lumps. Keep stirring until the mixture thickens into a heavy, smooth pudding.

Pour the thick mixture into a pan or square mold and smooth the top.

Let it cool for about 1 hour, until fully set and firm to the touch.

Unmold the pudding and cut it into squares to serve.
